2 tsp. extra virgin olive oil
2 cups halved cherry tomatoes
1 clove garlic, minced
1 Tbsp. chopped fresh thyme
1 baguette (400 g), split
1/2 cup Renée's Creole Dijon Sauce
85 g Brie cheese, sliced
3 cups cooked chicken breast strips
2 cups loosely packed baby spinach leaves

Step 1
Heat oil in large skillet on medium-high heat. Add tomatoes; cook 4 min. or until lightly charred, stirring occasionally and adding garlic for the last minute. Sprinkle with thyme.
Step 2
Spread bottom half of baguette with sauce; top with chicken, tomato mixture, cheese and spinach. Cover with top of baguette. Cut into 4 pieces.
