1 navel orange
1 grapefruit
1/3 cup slivered red onions
1/4 cup each chopped fresh parsley and mint
1/4 cup Renée's Poppy Seed Dressing, divided
6 cups loosely packed mixed baby salad greens
1/2 cup crumbled goat cheese
1/4 cup coarsely chopped walnuts

Step 1
Cut orange, then grapefruit into sections, holding the fruit over small bowl to reserve the juices.
Step 2
Place fruit sections in medium bowl. Add onions, parsley and mint; mix lightly.
Step 3
Toss salad greens with cheese and nuts in large bowl. Add remaining dressing to reserved fruit juices; mix well. Add to salad; mix lightly.
Step 4
Spoon salad onto platter; top with fruit mixture.

How to Section Fresh Fruit
To section fresh oranges or grapefruit, be sure to sharpen the paring knife first. A sharp knife is much safer to use than a dull one since it is less likely to slip while cutting. Cut a 1/2-inch-thick slice off both the top and bottom ends of the fruit. Cut the peel and white pith away from the fruit, using a downward cutting motion following the shape of the fruit. Place the peeled fruit piece on its side, then cut down along the membrane on both sides of each section to remove the fruit.
