1/2 cup Renée's Classic Ranch Dressing
1/4 cup fresh lime juice
1 Tbsp. honey
2 tsp. ground cumin
1 beef flank steak (1-1/2 lb./675 g)
3/4 tsp. ground black pepper, divided
1 cup fresh corn kernels, cooked
1 red pepper, finely chopped
1 avocado, chopped
1 green onion, finely chopped

Step 1
Mix dressing, lime juice, honey and cumin until blended. Reserve 2 Tbsp. dressing mixture; refrigerate. Pour remaining dressing mixture over steak in shallow dish; turn to evenly coat both sides of steak. Refrigerate 4 hours to marinate, turning after 2 hours.
Step 2
Heat greased barbecue to medium-high heat. Remove steak from marinade; discard marinade. Season steak with 1/2 tsp. black pepper.
Step 3
Grill steak 7 to 8 min. on each side or until medium doneness (160ºF). Transfer steak to cutting board. Let stand 10 min. Meanwhile, combine remaining ingredients, including remaining black pepper, with the reserved dressing mixture.
Step 4
Cut steak across the grain into thin slices. Serve with the corn salsa.

Garnish with 2 Tbsp. fresh cilantro before serving.

Serve with a side spinach salad drizzled with your favourite Renée's Vinaigrette.
Easy Cleanup
