1 lb. (450 g) new potatoes, halved
8 red leaf lettuce leaves
2 tomatoes, cut into wedges
2 hard-cooked eggs, quartered
1 can (170 g) white tuna in water, drained, flaked
1/4 cup slivered red onions
1/4 cup small black olives
16 fresh asparagus spears (370 g), trimmed, blanched
1/2 cup Renée's Poppy Seed Dressing

Step 1
Cook potatoes in pan of boiling water 10 to 15 min. or until crisp-tender; drain. Cool 15 min.
Step 2
Place lettuce on 4 plates; top with all remaining ingredients except dressing.
Step 3
Drizzle with dressing just before serving.

How to Blanch the Asparagus
To blanch fresh asparagus, add the spears to a large pot of boiling water. Cook, uncovered, 2 to 3 min. or until bright green in colour. Drain asparagus, then immediately plunge into bowl of ice water to stop the cooking. When completely cool, drain and pat dry.
