4 large baking potatoes (3 lb./1.4 kg)
1/4 cup milk
1-1/2 cups Cracker Barrel Shredded Double Cheddar Cheese, divided
1 cup chopped broccoli
1 cup chopped carrots
1/4 cup water
1/2 cup Kraft Rancher's Choice Dressing

Step 1
Pierce potatoes in several places with fork or sharp knife. Microwave on HIGH 20 to 23 min. or until tender, turning after 12 min.
Step 2
Cut potatoes lengthwise in half; scoop out centres into medium bowl, leaving 1/4-inch-thick shells. Mash potatoes with milk. Stir in 3/4 cup cheese; spoon into potato shells.
Step 3
Microwave broccoli, carrots and water in microwaveable bowl 2 min. or until tender; drain. Spoon over potatoes.
Step 4
Sprinkle with remaining cheese; drizzle with dressing.
