1-2/3 cups mashed, fully ripe bananas (about 4)
1/2 cup Miracle Whip Original Spread
1-1/2 tsp. vanilla
1-1/2 cups flour
1 cup sugar
1/2 cup walnuts, coarsely chopped
1/2 cup dried apricots, chopped
1 tsp. baking soda

How do I make it ?
Heat oven to 350ºF.
Beat bananas, Miracle Whip, egg and vanilla in large bowl. Combine remaining ingredients in separate bowl. Add to banana mixture; stir just until moistened. (Batter will be lumpy.)
Pour into 9x5-inch loaf pan sprayed with cooking spray.
Bake 1 hour or until toothpick inserted in centre comes out clean. Cool in pan 10 min.; remove to wire rack. Cool completely.

Prepare using toasted pecans.
Stir 4 oz. Baker’s Semi-Sweet Chocolate into batter before pouring into pan.
