4-1/2 cups small cauliflower florets, divided
2 Tbsp. Kraft Italian Zesty Lime Dressing
1 pkg. (24 g) 30%-less-sodium taco seasoning mix
1 cup shredded carrots
1/2 cup taco sauce
1/4 cup chopped fresh cilantro
1 Tbsp. lime juice
8 small corn tortillas, warmed
1/2 cup Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese

Step 1
Heat oven to 400°F.
Step 2
Use pulsing action of food processor to process half the cauliflower until coarsely chopped; spoon into large bowl. Repeat with remaining cauliflower.
Step 3
Heat dressing in large nonstick skillet on medium heat. Add cauliflower; cook 8 to 10 min. or until lightly browned, stirring occasionally. Stir in taco seasoning mix. Add carrots and next 3 ingredients; mix well. Cook 1 to 2 min. or until heated through and slightly thickened, stirring frequently. Remove from heat.
Step 4
Stack tortillas; wrap in paper towel. Microwave on HIGH 1 min.
Step 5
Spoon cauliflower mixture evenly down centers of tortillas. Sprinkle with cheese; roll up. Place, seam sides down, on baking sheet sprayed with cooking spray.
Step 6
Bake 10 to 12 min. or until taquitos are crisp.
