There's no arguing that banana bread is definitely one of the most popular quick breads out there. This moist banana bread goes in a totally new direction with the addition of dried apricots, and a crunchy wholesome topping of toasted sunflower seeds, pumpkin seeds and sliced almonds. This loaf is sure to be a welcome addition to any potluck or dessert table. Or enjoy as a lovely accompaniment to an afternoon coffee or tea.

1-1/4 cups all-purpose flour
1 cup whole wheat flour
1-1/2 tsp. Magic Baking Powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 cup butter, softened
3/4 cup packed brown sugar
2 eggs
3/4 cup buttermilk
1 cup mashed fully ripe bananas (about 3)
1-1/3 cups dried apricots, chopped
3 Tbsp. sunflower seeds, toasted
3 Tbsp. pumpkin seeds, toasted
3 Tbsp. sliced almonds, toasted
2 Tbsp. honey

Step 1
Heat oven to 350°F.
Step 2
Combine flours, baking powder, cinnamon and baking soda. Beat butter and sugar in large bowl with mixer until blended. Add eggs and buttermilk; mix well. Add bananas and flour mixture; mix just until moistened. Stir in apricots.
Step 3
Pour into greased and floured 9x5-inch loaf pan.
Step 4
Bake 1 hour or until toothpick inserted in centre comes out clean. Cool 5 min. Remove from pan to wire rack.
Step 5
Combine remaining ingredients. Spoon over bread; spread to evenly cover top of loaf. Cool completely.

How to Toast the Seeds and Nuts
Cook the seeds and nuts in skillet on medium heat 3 to 5 min. or until golden brown, stirring frequently.

For best results, use overripe bananas when preparing banana bread. Store fully ripe bananas in freezer-weight resealable plastic bags in freezer. When ready to use, remove bananas from freezer and refrigerate 1 to 2 hours or until thawed.
