Heat oil in large skillet on medium-high heat. Add next 4 ingredients; cook and stir 5 min. or until onions are crisp-tender. Add chicken mixture; cook 10 min. or until chicken is done and sauce is thickened, stirring frequently.
Remove skillet from heat. Stir in remaining ingredients.
