It tastes like restaurant fare, but this BBQ Skillet Chicken recipe features a simple pan sauce made with peppers, onions, tomatoes and barbecue sauce.

1 Tbsp. olive oil
4 small boneless skinless chicken breasts (1 lb./450 g)
1 green pepper, cut into thin strips
1/2 cup chopped onions
1 can (19 fl oz/540 mL) diced tomatoes, drained
1/4 cup Bull's-Eye Bold Original Barbecue Sauce
2 Tbsp. chopped fresh parsley

How do I make it ?
Heat oil in large skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Remove from skillet; cover to keep warm.
Add peppers and onions to skillet; cook 3 to 4 min. or until crisp-tender, stirring frequently. Stir in tomatoes and barbecue sauce.
Return chicken to skillet; simmer 3 to 4 min. or until heated through. Serve topped with sauce and parsley.

Substitute 1/2 lb. (225 g) sliced fresh mushrooms for the green pepper strips.
Serve with hot cooked rice or potatoes.
