1 beet (227 g)
1/4 cup Kraft Extra Virgin Olive Oil Greek Feta Dressing, divided
1 Tbsp. water
1 tub (227 g) hummus
1/4 cup crumbled feta cheese
1/4 cup sliced almonds, toasted
1 Tbsp. chopped fresh parsley

How do I make it ?

Step 1
Heat oven to 425°F.
Step 2
Cut off and discard thin slice from top and bottom of beet. Brush beet with 1 Tbsp. of the dressing; wrap in foil. Place in shallow pan.
Step 3
Roast 45 to 55 min. or until beet is tender; cool 20 min.
Step 4
Pierce top of beet with fork to secure beet while scraping peel off beet with tip of spoon.
Step 5
Cut beet into quarters; place in food processor. Pulse until coarsely chopped. Add remaining dressing; pulse until smooth. Scrape down side of food processor container. Add water through feed tube at top of processor while pulsing until mixture forms thin smooth paste. Spoon into medium bowl. Stir in hummus.
Step 6
Refrigerate 30 min.
Step 7
Top with cheese, nuts and parsley before serving.
