1-1/2 cans (19 fl oz/540 mL each) black beans (about 3 cups), rinsed, divided
1/4 cup flour
1 Tbsp. Heinz Yellow Mustard
1/2 tsp. ground cumin
1/4 cup oil, divided
1 red pepper, finely chopped
1 onion, finely chopped
2 Tbsp. chopped fresh parsley, divided
15 saltine crackers, finely crushed
1/4 cup sour cream

Step 1
Mash 1 cup beans in medium bowl. Add flour, mustard, cumin and remaining beans; mix well.
Step 2
Heat 2 Tbsp. oil in large skillet on medium heat. Add peppers and onions; cook 5 to 7 min. or until softened, stirring occasionally. Add bean mixture; mix well. Cook 2 to 4 min. or until thickened, stirring occasionally. Remove from heat; stir in 1 Tbsp. parsley. Cool slightly.
Step 3
Shape bean mixture into 12 patties, using about 1/4 cup bean mixture for each. Place cracker crumbs in shallow dish. Dip bean patties, 1 at a time, in cracker crumbs, turning to evenly coat both sides of each patty with crumbs.
Step 4
Heat remaining oil in same skillet. Add bean patties; cook 3 to 5 min. on each side or until heated through and golden brown on both sides. Serve topped with sour cream and remaining parsley.
