Take a break with a piece of our Blueberry Graham Coffee Cake. Studded with fresh blueberries, this homemade coffee cake uses graham wafer crumbs and on-hand ingredients.

1 cup 40% less fat graham wafers, crushed (about 15 wafers)

1 cup all purpose flour

1 cup granulated sugar

1 Tbsp. Magic Baking Powder

1 tsp. cinnamon

pinch ground cardamom (optional)

3/4 cup skim milk or low fat yogurt

1/2 cup oil

2 eggs

3/4 cup blueberries (fresh or frozen)

How do I make it ?

Step 1
COMBINE dry ingredients in a large bowl. Beat with milk, oil and eggs for 3 minutes. Pour one half of the batter into a greased 9" (23cm) square pan.
Step 2
TOP with one half of the blueberries. Pour remaining batter into pan and top with remaining blueberries.
Step 3
BAKE in preheated oven at 375°F (190°C) for 35-40 minutes, or until an inserted toothpick comes out clean and dry.
