If you like the warm smell of cinnamon doughnuts, chances are excellent you'll like these Breakfast Fritters, also known as buñuelos. Originally from Spain but also found throughout Latin America, these crispy fried doughnuts are the perfect kitchen project to take on when you have some time in the kitchen. And to add some family fun, ask the kids to help shape the dough!

1/2 tsp. ground cinnamon
1/4 cup sugar, divided
2 eggs
1 cup fine grind cornmeal
1/2 cup flaked coconut
1 tsp. Magic Baking Powder
1 cup oil, for frying

Step 1
Combine cinnamon and 2 Tbsp. sugar; set aside. Place eggs in medium bowl. Add cornmeal, coconut, baking powder and remaining sugar; mix with your hands until mixture is well blended and forms soft dough.
Step 2
Shape 1/4-cup portions of dough into 2-inch rounds with moistened hands. Use your finger or end of wooden spoon to poke hole into centre of each dough round.
Step 3
Heat oil in deep skillet on medium-high heat. Add fritters, 1 at a time, to hot oil. Fry 3 min. or until golden brown on both sides, turning once. Remove from oil with slotted spoon. Immediately add to cinnamon mixture; turn to evenly coat both sides of each fritter with cinnamon mixture. Serve warm.

Special Extra
Cook 1 cup packed dark brown sugar and 1/2 cup water in saucepan on medium heat 5 min. or until sugar is dissolved, stirring occasionally. Remove from heat. Stir in 1/2 tsp. vanilla. Drizzle over fritters before serving. Or, melt 2 oz. (1/3 of 170-g pkg.) Baker's Bittersweet Chocolate as directed on package; drizzle over fritters.
