1/4 cup crumbled blue cheese
1 lb. (450 g) lean ground beef
1/3 cup dry bread crumbs
1 green onion, thinly sliced
1 egg, beaten
2 Tbsp. Lea & Perrins Worcestershire Sauce
2 Tbsp. HP Sauce Original
1 tsp. Heinz Dijon Mustard
1 red onion, thinly sliced
1 Tbsp. brown sugar
1 Tbsp. lemon juice
1 Tbsp. oil
1 tsp. cayenne pepper sauce
1/2 tsp. ground coriander
4 hamburger buns

Step 1
Press cheese into 4 (2-inch) patties; place in shallow parchment-lined pan. Freeze 15 min.
Step 2
Mix next 7 ingredients just until blended; shape into 8 (1/4-inch-thick) patties. Top each of 4 meat patties with 1 cheese patty; cover with second meat patty. Press edges together to seal. Refrigerate 15 min.
Step 3
Heat barbecue to medium heat. Combine all remaining ingredients except buns; spoon onto large sheet of heavy-duty foil sprayed with cooking spray. Fold to make packet.
Step 4
Place foil packet on barbecue grate. Grill 3 min. Place stuffed meat patties on grate next to packet; grill 5 to 6 min. on each side or until done (160°F).
Step 5
Remove packet and burgers from barbecue; cut slits in foil to release steam before carefully opening packet. Fill buns with burgers and grilled onions.
