2-2/3 cups Cracker Barrel Shredded Tex Mex Cheese, divided
4-3/4 cups cooked long-grain brown rice
1-1/2 cups salsa
1 can (19 fl oz/540 mL) black beans, rinsed
1/2 cup each coarsely chopped green and red peppers
3 green onions, chopped
1 Tbsp. hot pepper sauce

Bake 30 min., uncovering for the last 10 min.
