3/4 cup sugar
2 tsp. Magic Baking Powder
1/2 tsp. salt
2 cups shredded carrots
1/2 cup sweetened flaked coconut, divided
2 eggs
1 cup coconut milk
1/4 cup oil
1 tsp. coconut extract
3/4 cup Philadelphia Cream Cheese Whipped Frosting

Step 1
Heat oven to 350ºF.
Step 2
Combine flour, sugar, baking powder and salt in large bowl. Stir in carrots and 1/3 cup flaked coconut.
Step 3
Whisk eggs, milk, oil and extract in separate bowl until blended. Add to flour mixture; stir just until moistened.
Step 4
Spoon into 12 paper-lined muffin cups.
Step 5
Bake 23 to 25 min. or until toothpick inserted in centres comes out clean. Cool in pans 10 min. Remove to wire racks; cool completely.
Step 6
Meanwhile, toast remaining flaked coconut; cool completely.
Step 7
Spread frosting onto muffins; sprinkle with toasted coconut.
