4 cups small cauliflower florets
1/4 cup butter
3 Tbsp. flour
1 cup milk
1 cup 25%-less-sodium chicken broth
1/2 tsp. ground nutmeg
1 cup Cracker Barrel Shredded Light 4 Cheese Italiano Cheese, divided
2 Tbsp. KRAFT 100% Parmesan Aged Grated Cheese

Step 1
Heat oven to 350ºF.
Step 2
Cook cauliflower in large pan of boiling water 4 min.; drain. Return cauliflower to pan; reserve for later use.
Step 3
Melt butter in medium skillet on medium-low heat. Whisk in flour; cook and stir 2 to 3 min. or until mixture starts to bubble. Gradually stir in milk, then chicken broth; cook 3 to 5 min. or until thickened, stirring constantly. Remove from heat. Stir in nutmeg.
Step 4
Add prepared white sauce and 1/2 cup shredded cheese to cauliflower; mix lightly. Spoon into 1.5-L casserole dish sprayed with cooking spray; top with remaining shredded cheese. Sprinkle with Parmesan.
Step 5
Bake 25 min. or until heated through. Remove from oven.
Step 6
Heat broiler. Broil cauliflower mixture, 4 inches from heat, 3 to 5 min. or until golden brown.
