2-1/2 cups prepared fruit (buy about 2 lb./900 g fully ripe peaches)
4-1/2 cups sugar, measured into separate bowl
1 Tbsp. vanilla bean paste
1 pouch Certo Liquid Pectin
3 Tbsp. fresh lemon juice

How do I make it ?

Step 1
Peel and pit peaches. Finely chop or grind peaches. Measure exactly 2-1/2 cups prepared fruit into large bowl. Add sugar and vanilla bean paste; mix well. Let stand 10 min., stirring occasionally.
Step 2
Add pectin and lemon juice; stir 3 min. or until most the sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
Step 3
Pour into clean jars or plastic containers; cover with tight-fitting lids. Let stand at room temperature 24 hours or until set. Freeze up to 1 year or refrigerate up to 3 weeks.

Place whole peaches in boiling water for 30 sec. Remove fruit from water with a slotted spoon and immediately place in a bowl of ice water to stop the cooking process. Remove fruit from the water, then peel with a paring knife.
