This baked chicken recipe is what we like to call a weeknight winner! Chicken breasts are stuffed with cream cheese, broccoli and cheddar cheese before they are baked with a crispy coating. Doesn't that sound like your new favourite chicken recipe?

175 g (about 3/4 of 250-g pkg.) Philadelphia Light Brick Cream Cheese Spread, softened
1 cup frozen chopped broccoli, thawed, well drained
1/2 cup Cracker Barrel Shredded Old Cheddar Cheese
1/4 cup plus 1 Tbsp. Kraft Zesty Italian Dressing, divided
6 small boneless skinless chicken breasts (1-1/2 lb./675 g), pounded to 1/4-inch thickness
1 cup Stove Top Lower Sodium Stuffing Mix for Chicken, finely crushed
1 Tbsp. butter, melted

How do I make it ?

Step 1
Heat oven to 400ºF.
Step 2
Mix cream cheese spread, broccoli, cheddar and 1 Tbsp. dressing until blended. Place chicken, smooth sides down, on work surface; spread with cream cheese mixture. Starting at one short end, tightly roll up each breast. Secure with wooden toothpicks, if desired.
Step 3
Spray baking sheet with cooking spray. Pour remaining dressing into shallow dish; place crushed stuffing in separate shallow dish. Dip chicken roll-ups, 1 at a time, into dressing, then into stuffing, turning to evenly coat all sides of each roll-up with each ingredient. Place, seam sides down, on prepared baking sheet; drizzle with butter.
Step 4
Bake 35 min. or until chicken is done (165ºF). Remove and discard toothpicks before serving chicken.

Serving Suggestion
Serve with a hot cooked vegetable, and a mixed green salad tossed with your favourite Kraft Dressing.
For a touch of heat, use Cracker Barrel Shredded Habanero Heat Cheese instead of the old cheddar.
