4 large baking potatoes (2-1/4 lb./1 kg)
1 lb. (450 g) lean ground turkey
1 onion, chopped
2 Tbsp. (about 1/2 of 35-g pkg.) 30%-less-sodium taco seasoning mix
1 cup Cracker Barrel Shredded Light Tex Mex Cheese, divided
2 fully ripe avocados, mashed
2 green onions, chopped

Step 1
Prick potatoes with fork or sharp knife; place on baking sheet sprayed with cooking spray.
Step 2
Bake 1 hour or until tender. About 20 min. before potatoes are done, cook turkey with onions in large skillet on medium heat until done, stirring occasionally. Stir in taco seasoning mix; cook 5 min., stirring frequently. Add 3/4 cup cheese; cook 2 to 3 min. or until melted, stirring frequently. Remove from heat.
Step 3
Cut potatoes lengthwise in half. Scoop out centres, leaving 1/4-inch-thick shells. Add 1 cup potato flesh to turkey mixture; mix well. Spoon into potato shells; sprinkle with remaining cheese. Return to baking sheet. Discard remaining potato flesh or reserve for another use. (See tip.)
Step 4
Bake stuffed potatoes 5 min. or until filling is heated through and cheese is melted. Top with mashed avocado; sprinkle with onions.
