Bring beer and lemon juice just to boil in large saucepan on medium heat.
Add cheese, in small batches, to beer mixture, cooking and stirring constantly after each addition until cheese is completely melted and mixture is well blended. Bring to boil; cook and stir 1 to 2 min. or until thickened. Remove from heat.
Stir in mustard.
