1 large baking potato (370 g)
2 tsp. olive oil
1/4 cup Cracker Barrel Shredded Mozzarella Cheese
1 Tbsp. KRAFT 100% Parmesan Aged Grated Cheese
1 Tbsp. chopped fresh parsley
2 Tbsp. Classico Bruschetta di Napoli Tomato Basil

Step 1
Heat oven to 425ºF.
Step 2
Cut thin lengthwise slice off one side of potato; discard removed slice. Place potato, cut side up, on cutting board. Starting about 1/4 inch from potato peel, cut inside of potato into 3 concentric rings, being careful to not cut through to bottom of potato and spacing rings about 1/2 inch apart.
Step 3
Place potato, cut side down, on cutting board. Make vertical short parallel cuts, about 1/2 inch apart, all the way around potato, being careful to leave centre of potato uncut. Turn potato over. Carefully pull potato pieces apart to slightly separate; brush with oil.
Step 4
Transfer potato, cut side down, to microwaveable plate. Microwave on HIGH 5 min. Carefully transfer potato to baking dish sprayed with cooking spray.
Step 5
Bake 10 min. or until potato is tender and heated through. Meanwhile, combine cheeses and parsley.
Step 6
Sprinkle cheese mixture over potato; bake 5 min. or until melted. Top with bruschetta.
