3 cups gemelli pasta, uncooked
1 Tbsp. olive oil
2 cups small cauliflower florets
170 g smoked sausage, sliced
125 g Velveeta Process Cheese Product, cut into 1/2-inch cubes
1 Tbsp. chopped fresh parsley

Step 1
Cook pasta in large saucepan as directed on package, omitting salt.
Step 2
Meanwhile, heat oil in large nonstick skillet on medium heat. Add cauliflower and sausage; cook 8 to 10 min. or until cauliflower is crisp-tender and golden brown, stirring frequently.
Step 3
Drain pasta, reserving 1/2 cup cooking water. Add pasta and reserved water to cauliflower mixture; mix lightly. Stir in Velveeta; cook 3 min. or until completely melted, stirring frequently.
Step 4
Sprinkle with parsley.
