Couscous, a staple of North African cuisine, is the star of the show in this simple chicken salad recipe. Combined with oranges, spinach, chicken, zucchini and red peppers, quick-cooking couscous adds great texture and flavour to this Chicken-Couscous Salad.

1 can (10 fl oz/284 mL) mandarin oranges, undrained
1 cup couscous, uncooked
4 cups loosely packed baby spinach leaves
2 cups chopped cooked chicken breasts
1 zucchini, shredded
1 red pepper, cut into strips
1/3 cup Kraft Berry Balsamic Dressing

How do I make it ?
Drain oranges, reserving liquid. Add enough water to reserved liquid to measure 1 cup; pour into medium saucepan. Bring to boil. Add couscous; cover. Remove from heat. Let stand 5 min.
Meanwhile, combine spinach, chicken, vegetables and oranges in large bowl. Add dressing; toss to coat.
Fluff couscous with fork. Add to salad; mix lightly.

Sprinkle salad with 1/2 cup crumbled feta cheese just before serving.
This colourful salad is equally delicious served warm or chilled.
