Creative Leftovers
Fried rice is the ideal way to use up whatever meat or vegetables you have on hand in the fridge. Just use these measurements as a guide: Pork Fried Rice: Substitute cubed uncooked pork tenderloin for the chicken. Beef Fried Rice: Substitute sliced or cubed uncooked grilling steak for the chicken. Vegetable Fried Rice: Substitute 3 cups mixed sliced or chopped veggies, such as broccoli, carrots and/or sweet peppers, for the chicken. Note: For uncooked vegetables, cook as directed until vegetables are crisp-tender. If the meat is cooked, just stir-fry it for 2 to 3 min. or until heated through before adding the vegetables, then the eggs.

Food Facts
This Chicken Fried Rice, or any other fried rice recipe, is a great way to use leftover cooked rice. The cold rice tends to be less sticky so will stay separated when stir-fried with the other ingredients. When using leftover cooked rice, substitute 4 cups cold cooked long-grain rice for the cooked rice in this recipe.
