Mix orange juice, barbecue sauce, ginger, soy sauce and garlic until blended. Reserve 1/4 cup orange juice mixture for later use. Pour remaining orange juice mixture over chicken in shallow dish; stir.

Refrigerate 1 hour to marinate.

Drain chicken; discard marinade. Heat oil in nonstick skillet over medium heat. Add chicken; cook, stirring frequently, 4 min. or until done. Remove chicken from skillet; cover to keep warm.
Step 4
Mix dressing and reserved orange juice mixture until blended. Place lettuce in four serving bowls; top with rice, cucumbers, cabbage, carrots and cooked chicken. Drizzle with dressing mixture. Sprinkle with sesame seed.
