Heat greased barbecue to medium heat. Remove chicken from marinade; discard marinade. Thread chicken onto 12 skewers.
Grill 8 to 10 min. or until chicken is done, turning occasionally. Meanwhile, combine vegetables and 1/4 cup of the remaining dressing mixture.
Spoon rice onto platter; top with skewers. Drizzle with remaining dressing mixture. Serve with cucumber mixture.
