2 Tbsp. sesame oil, divided
1 lb. (450 g) boneless skinless chicken breasts, cut into thin strips
1/3 cup Kraft Smooth Peanut Butter
1/2 cup lite coconut milk
2 Tbsp. reduced-sodium soy sauce
1 Tbsp. red curry paste
2 tsp. grated gingerroot
1/4 cup water
2 cups sliced carrots
2 cups snow peas, trimmed
1/4 cup sliced almonds

Step 1
Heat 1 Tbsp. oil in large nonstick skillet on medium-high heat. Add chicken, cook and stir 4 min. or until evenly browned. Spoon onto plate; cover to keep warm.
Step 2
Cook peanut butter, coconut milk, soy sauce, curry paste, ginger and remaining oil in saucepan on low heat 3 min. or until heated through, stirring frequently. Remove from heat.
Step 3
Add water and vegetables to skillet; cook 3 to 4 min. or until vegetables are crisp-tender. Add nuts, chicken and peanut butter sauce; mix well.
