Cover a single layer of eggs with water in saucepan. (Water should cover eggs by at least 1 inch.) Cover pan with lid, then bring water to boil. Remove pan from heat. Let eggs stand, covered, in hot water 15 min. Drain water from pan. Immediately run cold water over eggs until completely cooled. For best results, use eggs that have been in your refrigerator for a few days since fresh eggs are more difficult to peel.
