1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
1/4 cup unsalted butter, softened
1 tsp. vanilla
1/4 cup plus 1-1/2 tsp. coconut oil, divided
3 Tbsp. Swerve granular sweetener, divided
3 oz. Baker's Unsweetened Chocolate, chopped
9 small strawberries with stems

How do I make it ?

Step 1
Beat cream cheese and butter in medium bowl with mixer until creamy. Add vanilla, 1/4 cup oil and 1 Tbsp. sweetener; mix well.
Step 2
Spoon into 18 paper-lined mini muffin pan cups, filling each cup 3/4 full. Freeze 30 min.
Step 3
Microwave chocolate with remaining oil and sweetener in microwaveable bowl on MEDIUM 2 to 2-1/2 min. or until chocolate is almost melted; stir until chocolate is completely melted and mixture is well blended.
Step 4
Cover baking sheet with parchment. Cut strawberries lengthwise in half. Dip strawberry halves, cut sides up, into chocolate; place, dipped sides up, on prepared baking sheet. Refrigerate 10 min. or until chocolate is firm.
Step 5
Top each cheesecake cup with strawberry half just before serving.

A plant based sugar substitute, Swerve granular sweetener can be found in larger grocery stores and many health food stores. If you have Erythritol granular sweetener, you can use that instead of the Swerve.

Or for longer storage, freeze the cheesecake cups up to 1 month. If frozen, refrigerate the cheesecake cups 15 min. before serving to soften slightly. Meanwhile, you can prepare the chocolate-dipped strawberry halves.
