Not only is this no-bake cake perfect for a hot summer day, but the mint makes it a festive addition to any holiday party. Layers of chocolate wafers, minty chocolate pudding with a hint of coffee, and Cool Whip Whipped Topping meld into a soft, creamy "cake" after refrigerating overnight. 1 pkg. (4-serving size) Jell-O Chocolate Instant Pudding
2 Tbsp. Maxwell House Instant Coffee Original Roast
1-1/2 cups cold milk
1 tsp. peppermint extract
3 cups thawed Cool Whip Whipped Topping
2-1/2 pkg. (200 g each) round chocolate wafer cookies

Step 1
Beat pudding mix, coffee granules, milk and peppermint extract in large bowl with whisk 2 min. Fold in Cool Whip.
Step 2
Spread 1/2 cup pudding mixture into 10-inch ring on flat 12-inch plate, leaving 6-inch opening in centre of ring. Place 10 wafers, with sides touching, over pudding mixture on plate. Repeat with remaining pudding mixture and wafers to make additional layers, ending with layer of pudding mixture.
Step 3
Refrigerate overnight.

How to Fold
Use a folding technique to incorporate light airy ingredients, such as thawed Cool Whip Whipped Topping, beaten egg whites or whipped cream, into heavier mixtures, such as thickened Jell-O Pudding or prepared cake batter. Start by stirring a small amount of the lighter mixture into the heavier mixture to thin it slightly. Then, blend the remaining two mixtures by using a rubber spatula to gently cut down vertically into both mixtures, then scraping the spatula across the bottom of the bowl and up the side to fully incorporate the two mixtures, rotating the bowl as you go.
