Enjoy eating some extra veggies with our Chocolate-Spinach Muffins. We swapped the butter in the recipe with applesauce and even hid some spinach. Bet you can't tell!

3/4 cup unsweetened applesauce
3/4 cup light sour cream
3 oz. Baker's Unsweetened Chocolate, melted
1 egg white
1 tsp. vanilla
1 cup tightly packed baby spinach leaves
1 cup flour
1/2 cup sugar
1 tsp. eachMagic Baking Powder and baking soda
1/2 tsp. salt
2 Tbsp. Baker's Semi-Sweet Chocolate Chips

How do I make it ?
Heat oven to 350°F.
Blend applesauce, sour cream, melted chocolate, egg white, vanilla and spinach in blender until smooth.
Combine dry ingredients in medium bowl. Add applesauce mixture; stir just until dry ingredients are moistened. (A few lumps can remain.)
Spoon into 12 muffin pan cups sprayed with cooking spray. Sprinkle with chocolate chips.
Bake 18 to 20 min. or until toothpick inserted in centres comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.

These chocolatey muffins can be baked ahead of time. Cool, then wrap individually in plastic wrap and freeze up to 1 month. Thaw, then reheat in microwave just before serving.
