1/2 lb. (225 g) Mexican chorizo, crumbled
1/2 red pepper, cut into thin strips
1/2 onion, thinly sliced
1/2 cup sliced fresh mushrooms
1 fresh jalapeño pepper, seeded, sliced
375 g (1/2 of 750-g pkg.) refrigerated pizza dough
1 cup Catelli Tomato & Basil Pizza Sauce
1 plum tomato, thinly sliced
1-1/2 cups Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese
1 Tbsp. chopped fresh cilantro

Step 1
Heat oven to 450ºF.
Step 2
Cook chorizo in large skillet on medium heat 5 to 7 min. or until done, stirring occasionally; drain. Add red peppers and onions; cook 3 min., stirring occasionally. Stir in mushrooms and jalapeño peppers; cook 4 to 5 min. or until mushrooms are tender, stirring occasionally.
Step 3
Roll dough into 12-inch circle on lightly floured surface. Transfer to baking sheet sprayed with cooking spray. Spread with sauce; top with chorizo mixture and tomatoes.
Step 4
Bake 10 min. Top with cheese. Bake 8 to 10 min. or until cheese is melted and edge of crust is golden brown. Sprinkle with cilantro.
