1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
1-1/4 cups butter, softened
3 cups sugar
3/4 cup sweetened flaked coconut
1/2 cup cream of coconut
2 tsp. coconut extract
6 eggs
3 cups cake flour

Step 1
Heat oven to 325°F.
Step 2
Beat cream cheese and butter in large bowl with mixer until blended. Add sugar; beat until light and fluffy. Add flaked coconut, cream of coconut and coconut extract; mix well. Add eggs, 1 at a time, mixing well after each addition. Gradually add flour, beating on low speed after each addition until well blended.
Step 3
Pour into greased and floured 3-L fluted tube pan or 10-inch tube pan.
Step 4
Bake 1-1/2 hours or until toothpick inserted near centre comes out clean. Cool cake 15 min. Remove from pan to wire rack; cool completely.
