Step 1
Slip skins from grapes. Finely chop skins; set aside. Combine grape pulp and water in saucepan. Bring to boil; cover. Simmer 5 min. Press cooked pulp through sieve to remove seeds. Combine pulp and skins. Measure exactly 7-1/4 cups prepared grapes into large saucepan. Combine 1/4 cup sugar and pectin crystals. Add to grapes; mix well.
Step 2
Bring to full rolling boil on high heat, stirring constantly. Add remaining sugar; stir. Return to full rolling boil; cook 1 min., stirring constantly. Remove from heat. Stir and skim foam for 5 min. to prevent fruit from floating to surface.
Step 3
Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims. Cover with lids. Let stand at room temperature 24 hours or until set.

Keeping it Safe
This recipe will yield 8 (1-cup/250-mL) jars of jam plus a partially filled jar. Refrigerate the partially filled jar immediately and use within 3 weeks. Cooked jams can be stored, unopened at room temperature, for up to 8 months.
How to Accurately Measure the Sugar
To ensure accuracy of the sugar measure when preparing jams or jellies, use a dry measuring cup to measure the sugar, then place all the measured sugar in a separate bowl before adding it to the boiling fruit mixture in saucepan.
