6 cups prepared plums (buy about 4 lb./1.8 kg plums)
1/2 cup water
1 box Certo Pectin Crystals
8 cups granulated sugar

Step 1
Pit, but do not peel, plums. Finely chop plums, place in medium saucepan. Stir in water. Bring to boil; cover. Simmer 5 min. Measure exactly 6 cups prepared plums into large saucepan. Add pectin crystals; mix well.
Step 2
Bring to boil on high heat. Stir in sugar. Return to boil; cook 1 min. Remove from heat. Stir and skim 5 min. to prevent fruit from floating to surface.
Step 3
Pour into warm sterilized jars, filling up to 1/4 inch from rims. Cover with lids. Let stand at room temperature 24 hours or until set.

Keeping it Safe
This recipe will yield 9 (1-cup/250-mL) jars of jam plus a partially filled jar. Refrigerate the partially filled jar immediately and use within 3 weeks.
How to Accurately Measure the Sugar
To ensure accuracy of the sugar measure when preparing jams or jellies, use a dry measuring cup to measure the sugar, then place all the measured sugar in a separate bowl before adding it to the fruit mixture in saucepan.
