2 Tbsp. non-hydrogenated margarine, divided
10 rich round crackers, crushed (about 1/2 cup)
2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
6 sprigs fresh thyme
2 Tbsp. finely chopped fresh parsley
1 lb. (450 g) sea scallops, divided
1 onion, chopped
1/2 lb. (225 g) cremini mushrooms, sliced
2 cloves garlic, minced
1/4 cup dry white wine
1 tub (250 g) Philadelphia Light Cream Cheese Product

Step 1
Melt 1 Tbsp. margarine; mix with cracker crumbs, Parmesan and herbs.
Step 2
Add 1/2 Tbsp. of the remaining margarine to medium skillet; cook on medium-high heat until melted. Add half the scallops; cook 1 min. on each side or until lightly browned on both sides. Remove from skillet; cover to keep warm. Repeat with remaining scallops.
Step 3
Melt remaining margarine in same skillet on medium-high heat. Add onions; cook and stir 3 min. Stir in mushrooms and garlic; cook 5 min. or until mushrooms are tender, stirring frequently. Add wine and any liquid released from the scallops; cook 3 min. or until most the liquid is absorbed. Stir in cream cheese product; cook and stir on medium-low heat 1 min. Return scallops to skillet; cook 4 min., stirring occasionally. Spoon into 4 (1-cup) ramekins; sprinkle with crumb mixture.
Step 4
Heat broiler. Broil scallop mixture, 6 inches from heat, 2 min. or until golden brown.

Creative Leftovers
Cool, then refrigerate any leftovers. Reheat, then toss with hot cooked spaghetti to enjoy as part of a great lunch the next day.
For a change of pace, substitute other fresh mushrooms, such as shiitake and portobello, for all or part of the cremini mushrooms.
Cooking Know-How
It is important to drain any excess liquid released from the scallops and add it to the mushrooms while cooking. It will add more flavour to the dish and, most importantly, will make the dish creamier.
