What do I need ?

1 cup graham crumbs
1 cup all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 cup granulated sugar
1 egg, slightly beaten
1/3 cup oil
1 cup fresh or frozen cranberries, chopped
1/4 cup chopped pecans (optional)
1/2 cup raisins
2 large oranges, (use grated rind and juice of one orange and peel and chop the second orange)

How do I make it ?

Step 1
COMBINE dry ingredients. Add egg, oil, and 1/3 cup (75mL) orange juice. Stir just until all ingredients are moist. Do not over mix. Immediately fold in cranberries, nuts, raisins, chopped orange and rind from orange.
Step 2
PLACE into 4 well-greased and floured 5x3x2" (13x8x5cm) loaf pans.
Step 3
BAKE at 350°F (180°C) for 30 to 40 minutes or until done. Let stand 5 minutes, remove from pans and cool.
