1 Tbsp. oil
1 large onion, chopped
1 Tbsp. minced gingerroot
2 tsp. red curry paste
1 can (796 mL) pumpkin
2 cups 25%-less-sodium chicken broth
2 cups water
1/2 cup Philadelphia Cream Cheese Product
1/2 cup coconut milk

Step 1
Heat oil in large saucepan on medium heat. Add onions and ginger; cook 5 min., stirring frequently and adding curry paste for the last minute.
Step 2
Add pumpkin, broth and water; mix well. Bring to boil; cover. Simmer on medium-low heat 20 min., stirring occasionally.
Step 3
Blend pumpkin mixture, in batches, in blender until smooth, returning each blended batch to saucepan. Add cream cheese product and milk to saucepan; cook and stir on medium heat 2 to 3 min. or until cream cheese is completely melted and soup is heated through.

Season with ground white pepper to taste. Garnish with chopped fresh mint, cilantro or basil just before serving.
