2 cups elbow macaroni, uncooked
2 Tbsp. butter
1 small onion, chopped
2 Tbsp. flour
1/2 tsp. dry mustard
2 cups milk
2-1/2 cups Touch of Philadelphia Shredded Creamy Herb & Garlic Cheese, divided
1 can (540 mL) diced tomatoes, drained

Step 1
Heat oven to 350ºF.
Step 2
Cook macaroni as directed on package, omitting salt.
Step 3
Meanwhile, melt butter in large saucepan on low heat. Add onions; cook and stir 3 to 5 min. or under crisp-tender. Whisk in flour and mustard; cook 2 min. Gradually whisk in milk until blended; cook on medium heat 3 to 5 min. or until thickened, whisking constantly. Add 2 cups cheese; cook 1 min. or until melted, stirring constantly.
Step 4
Drain macaroni. Add to sauce; stir to evenly coat. Stir in tomatoes. Pour into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese.
Step 5
Bake 15 min. or until heated through.
