Use this mixture to make an omelet! Prepare as directed and cook in skillet, but do not stir egg mixture to scramble. As egg mixture sets, lift slightly with spatula to allow uncooked portion to flow underneath. When almost set, top with warmed leftover cooked vegetables such as mushrooms, broccoli or asparagus. Slip spatula underneath omelet, tip skillet to loosen and gently fold omelet in half. Slide onto serving plate.
