3/4 cup flour
2 Tbsp. cornmeal
1 Tbsp. sugar
1-1/2 tsp Magic Baking Powder
1/2 tsp. salt
1/4 tsp. crushed red pepper
1 egg
1/2 cup milk
2 cups fresh corn kernels
1/4 cup chopped fresh chives, divided
4 cups vegetable oil
1-1/3 cups Classico Riserva Marinara Pasta Sauce, heated to serving temperature

Step 1
Combine first 6 ingredients in large bowl. Whisk egg and milk until blended. Add to flour mixture; stir just until moistened. Stir in corn and 3 Tbsp. chives.
Step 2
Heat oil in deep fryer to 375°F. Use small ice cream scoop or 2 spoons to drop batter, in small batches, into hot oil. using about 2 Tbsp. batter for each fritter. Cook 1 to 2 min. or until golden brown, turning occasionally and adjusting heat as necessary to keep oil between 350°F and 360°F. Use slotted spoon to transfer each batch of fritters to paper towel-covered baking sheet.
Step 3
Place all fritters on platter; sprinkle with remaining chives. Serve with marinara sauce.

How to Keep the Fritters Warm
