1 cup quinoa, uncooked
1-3/4 cups 25%-less-sodium chicken broth
1 can (19 fl oz/540 mL) white kidney beans, rinsed
2 cups chopped English cucumbers
1 red pepper, chopped
5 green onions, sliced
60 g sliced deli smoked ham, finely chopped

How do I make it ?
Bring quinoa and broth to boil in medium saucepan; cover. Simmer on low heat 15 min. or until broth is absorbed. Cool.
Mix quinoa with remaining ingredients just before serving.
