140 g ham, cut into 1/2-inch cubes (about 1 cup)
4 fresh asparagus spears, trimmed, cut into 1/2-inch lengths
2 small zucchini, grated
2 small carrots, peeled, grated
1 small onion, grated
1-1/2 cups Cracker Barrel Shredded Old Cheddar Cheese, divided
1 cup self-rising flour
6 eggs
1/3 cup olive oil

Step 1
Heat oven to 350°F.
Step 2
Combine first 5 ingredients and 1 cup cheese in large bowl; sprinkle with flour. Toss to combine and coat thoroughly.
Step 3
Beat eggs and olive oil together with fork. Add to ham and vegetable mixture; mix well. Pour into 10-inch quiche dish or pie plate sprayed with cooking spray; top evenly with remaining cheese.
Step 4
Bake 45 min. or until centre is set. Let stand 5 min. before serving.
