To melt chocolate on top of the stove, place chocolate in small heavy saucepan; cook on low heat until chocolate is completely melted, stirring constantly. Remove from heat. Continue as directed. Or, place chocolate squares in top portion of double boiler or in bowl over a larger pan of simmering, not rapidly boiling, water. Cook until chocolate is completely melted, stirring occasionally. Note: Be careful not to get any water in the melted chocolate or it will "seize" and become grainy.
