2 zucchini (1 lb./450 g)
1 eggplant (1 lb./450 g)
2 Tbsp. olive oil
1 cup Heinz Tomato Ketchup
1 small onion, coarsely chopped
1/2 cup pitted black olives
1/4 cup tomato paste
2 Tbsp. capers
2 Tbsp. each chopped fresh oregano and fresh parsley
1 Tbsp. red wine vinegar
2 cloves garlic
1/2 cup Kraft 100% Parmesan Grated Cheese
1 refrigerated lasagna noodle (9-1/2x6 inches)
1 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese

How do I make it ?
Heat greased barbecue to medium heat.
Cut zucchini and eggplant lengthwise into 1/2-inch-thick slices; brush with oil. Grill 4 min. on each side or until tender. Transfer to plate; reserve.
Heat oven to 350ºF. Blend ketchup, onions, olives, tomato paste, capers, herbs, vinegar and garlic in blender until smooth; spoon into bowl. Stir in Parmesan. Cut lasagna noodle crosswise into 3 pieces.
Spread 1/4 cup prepared sauce onto bottom of 9x5-inch loaf pan sprayed with cooking spray. Top with layers of 1 noodle piece, 1/3 of the remaining sauce and half the grilled vegetables. Cover with second noodle piece and half of the remaining sauce. Top with remaining grilled vegetables, noodle piece and sauce; sprinkle with mozzarella. Cover.
Bake 45 min. or until heated through, uncovering after 30 min. Let stand 10 min. before cutting to serve.
Kraft Kitchen Tips!
For a touch of heat, stir 1 tsp. crushed red pepper into prepared sauce along with the Parmesan.
Serve with a mixed green salad tossed with your favourite Kraft Dressing.
