Orange and cocoa give these chocolate muffins their moist, rich flavour. Of course, the white chocolate chips don't hurt. A Double Chocolate Orange Muffin - how's that for a sweet treat?

What do I need ?

1 orange
buttermilk
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 Tbsp. Magic Baking Powder
1/2 tsp. salt
2 eggs
1/3 cup granulated sugar
1/3 cup oil
1/2 cup white chocolate chips

Step 1
GREASE 12 large muffin tins or line with paper baking cups.
Step 2
GRATE rind from orange; set aside. Squeeze juice from orange and pour into measuring cup. Add buttermilk to measure 1 cup liquid. Set aside.
Step 3
SIFT together flour, cocoa, baking powder and salt in large bowl.
Step 4
WHISK together eggs, sugar and oil until creamy; stir in orange rind and buttermilk mixture.
Step 5
STIR liquid mixture into dry ingredients with chips, stirring just until moistened. Spoon into muffin cups, filling 2/3 full.
Step 6
BAKE at 375°F (190°C) for about 20 minutes or until firm to the touch. Cool in pan 5 minutes; remove muffins and cool on rack. Store in airtight container.
