Special Extra
Add 1 tsp. crushed red pepper to apricot mixture before brushing onto ham.
Purchasing a Ham
When purchasing a fully cooked ham, look for a ham with a finely grained texture and rosy pink colour. An iridescent appearance on the meat’s surface does not affect quality. Press the meat to make sure it feels firm, not spongy. Plan to get 4 to 5 servings from each pound of ham.
