This Easy Cheesy Zucchini and Cauliflower Bake is comfort food at its best. What's even better is that in addition to being so simple to put together, it also makes a great addition to any dinner menu.

4 cups small cauliflower florets
1 each green and yellow zucchini, cut into 1/4-inch-thick slices
2 Tbsp. oil
1 onion, finely hopped
1 clove garlic, minced
1/2 cup 25%-less-sodium chicken broth
1 tub (227 g) Philadelphia Cream Cheese Product
1 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese, divided
2 tsp. chopped fresh rosemary

Step 1
Heat oven to 450°F.
Step 2
Combine cauliflower and zucchini in 1.5-L casserole dish sprayed with cooking spray.
Step 3
Bake 15 min. or until cauliflower is crisp-tender.
Step 4
Meanwhile, heat oil in large skillet on medium heat. Add onions; cook 2 to 3 min. or until slightly softened. Add garlic; cook and stir 1 min. Stir in chicken broth; cook 1 min. Add cream cheese product and 1/2 cup shredded cheese; cook 2 to 3 min. or until melted, stirring constantly.
Step 5
Add cream cheese mixture to vegetable mixture in casserole dish along with the rosemary; mix lightly. Sprinkle with remaining shredded cheese.
Step 6
Bake 10 min. or until top is golden brown and vegetable mixture is heated through.

How to Cut a Cauliflower
You will need about half a small head of cauliflower to get the 4 cups florets needed to prepare this recipe. To cook the cauliflower, pull off any outer green leaves from the head. Break cauliflower into equal-size florets, then use as directed.
Substitute broccoli florets for the cauliflower.
